\\ banana pudding

i've always wanted to start a food blog about baking & the occasional cooking & FINALLY i've gotten around to it. who knows how many people will actuallyread this but at least it'll give me something to do & put recipes all in one place!

i've been craving Magnolia's banana pudding constantly these past couple months. i always buy the small size thinking that i'll be the only one eating it, but of course the parents & sister always end up taking bites here & there, leaving me to enjoy only small portions. plus, bringing it home from the city is annoying & just troublesome. after looking around online at recipes, i d
decided i'm fully capable of making it on my own, which led to amazingness & satisfaction.

\\ BANANA PUDDING
(serves 8-10)

1 box of vanilla fat-free pudding (instant/cold is awesome)
1 can of condensed milk
1 1/2 cup of cold water or milk (depends on pudding)
3 cups of heavy cream
3-4 ripe bananas
box of vanilla wafer

i start off by making the pudding. i always have bad luck with the pudding that involves warm water or heating it up on the stove so i stick with the instant one that uses cold water or milk. mix the pudding & water/milk until it becomes a little heavier, but not thick. add in the condensed milk & continue to mix. i use the whole can since i love the taste & sweetness, but you can always reduce the amount.

while waiting for the pudding to thicken, pour the heavy cream into a bowl. using a mixer, beat it until it is light & fluffy. it takes a while & a lot of patience but it'll get to that point eventually. thank goodness for my mom's stand mixer.

if there's any wait time, cut up the bananas into slices. don't cut them too early or they'll start to turn brown & not look as nice.




after the heavy cream is whipped, add the pudding into the bowl of whipped cream. gently fold the pudding into the cream using a spatula so the mixture stays fluffy & airy. once it's mixed well, put 1/3 of the mixture into the bottom of a glass bowl, which becomes the first/base layer.




take the vanilla wafers & place on top of the pudding mix. i chose to break mine up but not necessary. make sure you put a lot on because the amount shrinks when it becomes moist. i think i used about 1/3 - 1/2 of the bag of nilla cookies. on top of that, spread out the slices of banana evenly. that makes up your 2nd & 3rd layer.




add more of the pudding on top of that & repeat the same steps until you run out of putting. breaking up some of the wafers & sprinkling it on top makes it look more decorative if you care for that.
